zest of 1 lemon
100 g caster sugar
50 g cornflour (corn starch)
500 g full cream milk
4 eggs
1 teaspoon vanilla bean paste or vanilla extract

MILL THE DRY INGREDIENTS
Place the lemon zest, sugar and cornflour into the Thermomix bowl.
Mix until finely combined.
ADD THE WET INGREDIENTS
Add the eggs, milk and vanilla bean paste.
Cook for 7 minutes, 90 degrees, Speed 4.
Serve immediately.
EXPERT TIPS
Vanilla bean paste is quite an expensive ingredient and while it gives a delicious flavour, it's not essential to this recipe. It can be replaced with vanilla extract or vanilla essence.
How can I make my custard extra thick?
If you would like your custard to be very thick, cook it for an extra 2-3 minutes (but remember that it will thicken on cooling).
If you don't want to use your custard immediately, pour it into a bowl and place cling-wrap so that it touches the surface of the custard to stop it from forming a 'skin'.
Storing
Store any leftover custard in an airtight container in the fridge. Place a sheet of cling-wrap over the top (see tip above).
